Tex-Mex Cheese Enchiladas
So just about any Mexican restaurant you go to in Texas has Cheese Enchiladas. They are meatless, easy, and great for kids!
Ingredients:
12 corn tortillas
1/2 block of cheddar cheese cut into 12 pieces
1/2 block of cheddar cheese shredded
2 Tbs flour
2 Tbs butter
1 Tbs chili powder
1 tsp garlic powder
1 tsp onion powder
1/4 tsp cumin
1/2 tsp salt
1/2 tsp black pepper
2 cups of water
Preheat oven to 350 degrees and grease a baking dish.
Take a slice of cheese and roll it up like a cigar into each tortilla. Place into the prepared dish. In a medium saucepan melt the butter over medium high heat. Add in the flour and stir until a paste forms. Cook for about 2 minutes stirring constantly. Remove from the heat and add in the seasonings. Pour in the water a cup at a time and stir until there are no lumps. Return to the heat and cook for 4 to 5 minutes until thickened. Pour this sauce over the top of the enchiladas and top with the shredded cheese. Cover with foil and bake for 30 minutes until hot and bubbly!
