Roasted Broccoli
If you like broccoli you'll love this, if you don't you'll like it a little more than you did before! Also makes an amazing pasta dish and broccoli beef in an instant!
Ingredients:
2 Large bunches of broccoli cut off the stem
and seperated into flowerettes
2 TBS olive oil
1 tsp salt
1 tsp black pepper
1 tsp onion powder
1 clove of garlic minced
1 TBS orange grated orange peel
juice of half an orange
3 slices of bacon cooked and crumbled
1/4 cup sliced toasted almonds
Preheat oven to 375 degrees
In a large bowl combine the oil, salt, pepper, and onion powder. Toss the broccoli in this mixture until it is well coated. Spread out evenly on a baking sheet and roast for 20 minutes. Remove from the oven and add the garlic and orange peel to the broccoli, toss to coat and spread back out on the pan. Cook for another 10 minutes until the broccoli is roasted and crispy on the edges. Remove from the oven and squeeze orange juice over the top. Garnish with the bacon and almond slices. Truly a unique way to eat this healthy veggie!
**To make a pasta dish, toss the broccoli with some grilled chicken breast, pasta, parmesean cheese, and a little more olive oil. Healthy and delicious!
** Want broccoli beef? Toss this broccoli with some grilled steak slices that were marinated in soy sauce and brown sugar, and put it on top of some sticky white rice!!! YUMMY!
