Crouton Breakfast Casserole
One of the easiest, go to Sunday Breakfast or brunch cassroles I know! Its wonderfully seasoned and delicious!
Serves 6-8
Ingredients:
1 package of seasoned croutons (I prefer the larger sized ones)
1 dozen eggs beaten
1 package of maple breakfast sausage
2 cups of tater tots
1 cup of heavy cream
1 cup cheddar cheese
1/2 stick of butter diced
4 strips of bacon
1/2 onion diced
1/2 bell pepper diced
salt and pepper to taste
Grease a 9x13 baking dish
Fry the bacon until crispy. Remove from pan and cool on paper towels. In the bacon grease saute sausage, onion and pepper until cooked through. Transfer to a bowl and let cool. In a seperate bowl beat the eggs until frothy, add cream salt and pepper. In the prepared dish pour the croutons into the dish and spread them out evenly. Add the tater tots and sausage mixture over the top. Pour the eggs over the sausage, croutons, and tots, top with cheese, and diced butter. Put in the refridgerator for at least 30 minutes or over night to soak. During this time preheat the oven to 350. Once it has soaked and the croutons are soft, Bake at 350 for 40- 50 minutes until cooked through. Top with crumbled bacon, chopped green onion, and tomatoes if you like!
