Momma's Chicken Salad
This is a chicken salad that is great for showers, ladies luncheons, and just a nice summer lunch! It has some pretty unique items in it, but very worth the taste you will get out of them!
Makes 10-12 sandwhiches
6 boneless chicken breasts
1 chicken bullion cube
6 cups of water
1/2 a red onion diced finely
2 stalks of celery diced finely
1/2 cup chopped pecans
1 cup mayonaise
1 TBS sweet pickle relish
1 cup of red grapes cut in half
1/2 tsp salt
1/2 tsp pepper
In a large pot boil the chicken in the water and bullion until cooked through, 30 minutes or so. Shread the chicken or dice it however you prefrer.
In a large bowl combine the mayonaise, salt, pepper, onion, celery, pecans and relish. Stir until it is all blended and add in the chicken. Once the chicken is moistened with the sauce add in the grapes. Stir gently and serve on crackers, croissants, or bread!
