Cheesy Lemon Jello Mold
Molded salads were a big thing back in the 60's and 70's and my family still makes this one for holidays!
Ingredients:
(Double recipe to make 9x13)
1 (3oz.) pkg. lemon jello
1 cup boiling water
1 (6 oz.) can frozen orange juice, undiluted
1 (8oz.) pkg. cream cheese, softened
1 cup grated carrots
1 (8oz.) can crushed pineapple, undrained
Lightly spray a 9x13 inch dish (for double recipe) or a jello mold with cooking spray
Dissolve jello in boiling water, stir in orange juice. Beat cream cheese until smooth: gradually adding jello mixture beating until smooth. Stir in remaining ingredients. Pour into prepared pan or jello mold. Chill until set-overnight. Gently unmold onto a serving platter (if you used a jello mold) and garnish however you'd like.
