Baked Onion Dip
One of my most requested party recipe! Can be adapted in so many different ways! You will love this at your next get together!
Basic Dip Ingredients:
2 onions diced finely (you can use any color onion or a combination of several. My favorite is red and green!)
1 (8oz) package of cream cheese
1 package of italian blend cheese
1/2 cup of mayonaise (NOT miracle whip)
1/2 tsp pepper
1 tsp salt
2 TBS olive oil or butter
Directions:
Preheat oven to 350 and grease a small baking dish...
Heat oil or butter in pan until hot, saute onions until soft. This step can be omitted but you will have to bake your dip almost an hour to get them completely done. Once the onions are soft, stir in salt and pepper, and cream cheese. Keep stirring until the cheese is melted. Take off the heat and stir in the italian cheese. Immediately transfer into a greased baking dish and bake at 350 degrees for 30 minutes until golden brown and bubbly! Serve with crackers, toasts, veggies, or bread.
Variations:
Italian onion dip... add 1/4 tsp red pepper flakes, 1 TBS freshly chopped basil, 1 clove of garlic and 1/4 cup of chopped sundried tomatoes.
Mexican Onion dip... add 1/2 a chopped seeded jalepeno, 1 TBS chopped fresh cilantro,change the italian cheese to a mexican cheese blend, and garnish with black olives and diced tomatoes.
French Onion Soup dip.... Add one beef bullion cube when you add the cream cheese and omit the salt. Instead of italian cheese blend stir in a cup of shredded swiss cheese. Serve with crostini or bagel chips.
