Brown Beans
This is probably one of my top 5 favorite comfort foods. They are just simple pinto beans, but man are they comforting and warm your insides! I used to beg my Mee Mee to make these for me every time I visited her!
Ingredients:
1 package of pinto beans
1/2 onion diced
1 ham bone
2 Tbs chili powder
2 cloves of garlic
2 stalks of celery diced
1/2 a bell pepper
1 tsp salt
1 tsp black pepper
10 cups of water
The night before.... In a large pot add the beans and cover with water. To that water add enough salt to make it taste like ocean water. About 3 TBS. Let them soak overnight.
The next day rinse the beans well. Add in the water, onion, celery, hambone, and bell pepper. Cook on high until it boils and reduce to a simmer. Cover and cook for 3-4 hours until the beans are tender the water will have reduced a great deal. Remove the ham bone. Add in the chili powder salt and pepper. Turn up to medium high and Cook an additional 10 minutes until thickened. Make sure you stir it frequently or the beans will stick to the bottom of the pot! Serve with cornbread or rice!
