Paradise Cake
This cake lives up to its name! It is tropical heavenly goodness!
Ingredients:
1 Pineapple Cake Mix
3 eggs
1 package of coconut pudding mix
1/3 cup oil
1/2 cup evaporated milk
1 can of crushed pineapple
1 cup of shredded coconut
1 container of whipped topping
1 tsp vanilla
1/2 cup toasted coconut
Preheat the oven to 350 degrees. Grease and flour a 9/13 inch pan. Or two 8 inch rounds.
In a mixing bowl combine the cake mix, milk, eggs, oil, and vanilla. Stir until combined. Batter will be thick. Add in the pineapple, juice and all. Stir well and add in the coconut. Pour into prepared pan and bake for 40 minutes or until a toothpick comes out clean. Might be a shorter or longer cooking time depending on your oven. Once cake is cooked, immediately place the cake in the freezer for at least 2 hours. Once the cake is completely cooled and frozen top with the whipped topping and toasted coconut.
