Pork Chop Supper
This is a down home, warm your insides dish that is alot like stew, but a little heartier! Plus its easy because its done in the crock pot!
Ingredients:
6 boneless pork loin chops
4 potatoes peeled and sliced into thin slices
6 carrots peeled and sliced into rounds
1 onion diced
3 cans of V8 juice
salt and pepper
1 tsp celery salt
In a large skillet heat some vegetable oil until hot. Pat the pork chops dry and season with salt and pepper. Brown each chop in the oil until nicely colored. Don't worry about cooking them through, they will spend plenty of time in the broth cooking. Once all the chops are browned, pour off the left over oil and add in the v8 juice, scraping up all the brown bits of flavor on the bottom. In a crock pot add a cup full of the sauce and then layer the pork chops on top. Followed by the onions, carrots, and potatoes. Sprinkle with celery salt and pour the sauce over. Cook on low heat for 6 hours or high for 4 until the potatoes and carrots are fork tender. Serve with some corn bread or poured over some creamy polenta!
