BBQ Bacon Chicken Bites
These are a great appetizer for any party, and would even be delicious on a toasted roll for a unique sandwich!
Ingredients:
3 boneless skinless chicken breasts cut into 1 inch thick strips
(could use tenderloins cut in half across)
1 package of bacon
2TBS BBQ Sauce (choose your favorite)
1/2 tsp salt
1/2 tsp pepper
Brown Sugar Sprinkle:
2 TBS brown sugar
1/4 tsp chili powder
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
Preheat oven to 350 degrees. Line a baking pan with foil and spray with cooking spray.
Mix the brown sugar sprinkle ingredients and set aside. Place the chicken in a large bowl and toss with the BBQ sauce, salt and pepper. You can let this marinate overnight if you wish, but at least 20 minutes. Take a strip of bacon and wrap it around each piece of chicken. You may need to cut the strips of bacon in half, depending on the size of your chicken. Secure each piece of bacon with a toothpick and place on the baking pan. Continue this process until all of the chicken is used up. Top each piece of bacon wrapped chicken with the brown sugar mixture and rub it in to coat. Bake at 350 degrees, on the middle rack of the oven, for 30 minutes or unti the chicken juices run clear when pricked with a fork. Let rest for 5 minutes and serve with a little BBQ sauce on the side or remove the toothpicks and serve on a toasted roll!
