Creamy Polenta
This is a great side dish for any type of soup or stew that you'd normally eat with cornbread. It is also a nice addition to a spicy mexican or pork dish!
Ingredients:
3 cups of water
1 cup of polenta
1/2 stick of butter
1 cup of cream
1 cup of cheese (whatever kind you like)
salt and pepper to taste
In a large saucepan heat water and cream until boiling. Add a pinch of salt. Stir in the polenta and reduce the heat to medium low. Cook for 20 minutes stirring occasionally to make sure it isn't sticking to the bottom of the pan. Once it is finished cooking, remove from the heat and stir in the butter until it is all melted. Stir in the cheese and season to taste. This is a great base for adding all types of ingredients. I like blue cheese, herbs, sundried tomatoes, even bacon!
