Oatmeal Cream Pies
Your favorite store bought snack is now in a homemade version!!!! Kids will love helping you with these fun treats!
Ingredients:
1 cup unsalted butter softened
1 cup white sugar
3/4 cup brown sugar
2 tbs molasses
2 eggs
1 3/4 cup of flour
2 tsp vanilla
1/2 tsp salt
1 tsp cinnamon
1 tsp baking soda
2 cups rolled oats
Preheat oven to 375 degrees and grease a cookie sheet.
In a mixing bowl combine sugars and butter. Whip until light and fluffy. Add in one egg at a time and mix well. In a seperate bowl combine the dry ingredients except for the oats. Slowly add a little at a time to the mixing bowl while stirring on low. Once the dry mixture is all blended in beat on medium speed for 2 minutes. Stir in the oats. Drop by tablespoons onto prepared cookie sheet. Bake for 14 minutes until browned but don't over bake. Transfer to a rack to cool.

1 tsp cream of tartar
1/2 cup sugar
1 tsp vanilla
Frosting:
In a double boiler beat egg whites and sugar until frothy and the temperature reaches 160 degrees on a candy thermometer. Once it is at that level pour it into your mixing bowl and whip on high until stiff peaks form. Slowly fold in the vanilla. Spread a tsp onto the bottom half of a cookie and top with another! Enjoy!!!
