Broccoli Salad
Very yummy and healthy addition to any meal! Can be made sugar free as well!
Ingredients:
2 bunches of fresh broccoli chopped into small pieces
6 strips of bacon fried and crumbled
1/2 cup of dried cranberries
1/4 cup of toasted pecans
1/2 of a red onion diced finely
2 tbs vinegar (I like apple cider)
3 tbs granulated sugar (can sustitute splenda)
the zest from one orange
1 cup mayonaise
1 tsp onion powder
1 tsp garlic powder
1 tsp pepper
1 TBS poppy seeds
1/2 tsp salt
Orange juice as needed
In a small bowl mix together the mayonaise, vinegar, sugar, onion powder, garlic powder, pepper, salt, orange zest, and poppy seeds. If the dressing is really thick, add in a tbs of juice from the orange at a time until it is the consistancy of salad dressing. In a large bowl add the broccoli, cranberries, onion, bacon and pecans. Toss with the dressing and refridgerate for at least an hour so that the veggies mariniate. Serve with anything that needs a tangy kick!
