Southern Fried Corn
A great southern comfort side dish straight from the heart of Texas!
Ingredients:
1 package of frozen corn or 6 ears of corn cut off the cob
1/2 a bell pepper diced
1/2 an onion diced
4 strips of bacon
1 clove of garlic
2 TBS butter
1/2 cup cream
1 tsp salt
1/2 tsp pepper
1/2 cup shredded cheddar cheese
In a large skillet saute bacon until crispy. Remove from the pan and crumble for later. In the bacon grease saute the onion and bell pepper until soft. Once they are nice and tender, add in the corn and cook on medium heat untl the corn is bright and yellow, about 10 minutes. Add in the butter, salt and pepper, and garlic. Continue to cook for about 5 minutes. Turn off the heat and add in the cream and cheese. Stir until blended. Top with the bacon crumbles and serve! Simple goodness on a plate!
*add 1/2 chopped jalepeno and substitute pepper jack cheese for the cheddar for a nice spicy kick!
